Ingredients
-
1 tablespoon Primal Kitchen Pure Avocado Oil
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
-
1 cup Primal Kitchen Buffalo Sauce
-
1 large bag Wilde Himalayan Pink Salt Protein Chips
- 12 ounces shredded Monterey jack cheese
-
Primal Kitchen Ranch Dressing, for drizzling or dipping
Directions
Heat avocado oil in a skillet over medium heat.
Add the chicken breasts. Season both side with salt and pepper. Cook until done, about 4-5 minutes per side, until the internal temperature reaches at least 165°F.
Remove from the skillet and let rest for a few minutes. Once cooled, shred the chicken using two forks.
Preheat your oven to 350°F.
Add Buffalo Sauce to your skillet and bring to a gentle simmer. Reduce the heat to low.
Add the shredded chicken and toss to coat. If the sauce is too thick, add a little hot water and simmer for a few minutes.
Build the nachos: Layer Wilde Chips on a parchment-lined baking sheet. Top with shredded cheese and chicken. Keep layering chips, cheese, and shredded chicken until you’ve used up the ingredients.
Place the baking sheet in your preheated oven and cook until the cheese is just melted.
Top with a drizzle of ranch. Serve and enjoy!
