Game day just isn’t the same without a golden brown, sauce-slathered wing dripping fiery flavor on your plate. But if you’re trading the fryer for the oven, it can be tough to get the crispy crunch that makes sports bar wings so flipping delicious. That’s where actor and podcaster Nick Viall has a leg (or should we say a wing) up on the competition. “I’m a huge football fan so during football season, my Sundays revolve around throwing on the game and making some great sideline snacks for me and my fiancé, Natalie,” Nick says.
The reality TV star’s unique recipe for extra crispy wings has a secret ingredient he shared with us: baking powder. Lightly dusting your chicken before baking ensures that gorgeous brown hue and helps it crisp up almost exactly like the traditional deep-fried version, minus the need for cupfuls of oil. Nick bastes his wings and drummies in a combo of melted butter and our fiery Original Buffalo Sauce before baking, then enjoys the finished wings with additional sauce and Natalie’s favorite addition, Primal Kitchen Ranch. “I make crowd-pleasing buffalo chicken wings with the key ingredient being Primal Kitchen Original Buffalo Sauce and we eat them throughout the day with ranch and celery,” Nick says. “Even if the Packers lose, I know my wings are winning.”
