Teriyaki Chicken Bowl with Cauliflower Rice

An upgrade to classic teriyaki stir-fry, this savory dish gets its sweetness from Thick & Sticky Honey Teriyaki Sauce made with real ingredients like organic coconut aminos, organic honey, and organic date paste. Ingredients
4 heaping cups fresh or frozen broccoli florets (about a 12-ounce bag)

1 Tablespoon Primal Kitchen Avocado Oil
- 1 pound boneless, skinless chicken breast tenders, cut into 1-inch cubes

- 6 cups fresh or frozen cauliflower rice
1 Tablespoon sesame seeds
4 green onion stalks, sliced
Directions
In a large pot, add 1 cup of water and bring to a simmer. Add over a steaming rack or basket and pour broccoli florets on top. Cover with a lid and let broccoli steam for 4 minutes until slightly tender and bright green.
Meanwhile, in a large pan, heat avocado oil over medium-high heat. Once the pan is hot, add the cubed chicken and let lightly brown on all sides, about 4 minutes.
Pour honey teriyaki sauce over the chicken and stir to coat. Cook for an additional 2 minutes until the sauce has thickened and the chicken is cooked through.
Add the steamed broccoli to the pan and stir for 1-2 more minutes until heated through.
Heat another large pan over medium-high heat and saute cauliflower rice for 5-7 minutes until cooked through and lightly browned.
To serve, divide the cauliflower rice among 4 bowls or meal prep containers. Top each bowl with the teriyaki chicken and broccoli.
Garnish evenly with sesame seeds, green onions, and drizzle with more teriyaki sauce on top.
Recipe Note
- When steaming broccoli from a bag, we recommend steaming for 1 minute less than the package instructions direct. This will give you al dente broccoli that will get more tender after sautéing for 1-2 minutes at the end.
