Ingredients

2 Tbsp. Primal Kitchen Avocado Oil
- 1.5 cups chicken bone broth
- 2 cans white beans
- 1.5 lbs. chicken thighs
- 1 cup chopped green chilies
- 1 white onion, diced
- 2 Tbsp. minced garlic
- 1 pinch coriander
- 1 tsp. chili powder
- 1 pinch oregano
- 1 pinch cumin
- 1 tsp. salt
- 1 tsp. cayenne pepper
- 1 pinch black pepper
- 1 lime, for juicing
- Beef gelatin powder, to thicken

4 oz. Primal Kitchen Cilantro Lime Dressing
- Shredded cheese
- 1 avocado, diced
- 1 lime, cut into wedges
- 1 jalapeño pepper, seeded and sliced into rings
- Grain-free corn chips, for garnish (we used Siete)

Directions
Drizzle Avocado Oil onto the inside bottom of your Instant Pot. Add bone broth, beans, chicken, chiles, onion, and garlic into the pot.
- Lightly stir to combine. Add spices and squeeze lime over the contents of the pot.
- Stir again until spices are dispersed into the mixture.
- Add a dash of gelatin powder to the pot for added thickness, if desired.
- Cook for 20 minutes on the manual high pressure setting. Let it naturally depressutize for 10 minutes.
- Use a fork to shred the chicken. Pour in Cilantro Lime Dressing & Marinade. Mix thoroughly until well combined.
- Dish into bowls and serve topped with chopped avocado, lime wedge, shredded cheese, jalapeño slices, and a grain-free tortilla chip if desired.
