Our twist on the original taco soup recipe, this cozy high-fiber meal comes together in no time with a base of flavorful, aromatic pasta sauce made from organic California-grown tomatoes. To make this soup even higher in fiber, add an extra can of beans or 1 cup of cooked lentils. Serve it as-is or garnish your taco soup with an array of festive toppings like shredded cheese, diced avocado, or sour cream.

Ingredients

1 teaspoon Primal Kitchen Pure Avocado Oil
- 1 pound lean ground chicken, turkey, or beef
- 1/2 medium white onion, diced
- 1 medium bell pepper, diced
- 3 garlic cloves, minced
- 1 can of black beans, drained and rinsed
- 1 cup corn kernels

1 jar of Primal Kitchen Tomato Basil Marinara Sauce
- 2 cups low-sodium chicken broth
- 1 packet taco seasoning (We used Siete)
- Ripe avocado, diced
- Fresh cilantro or basil, chopped
- Grain-free tortilla chips
- Lime wedges

Directions
Heat the avocado oil in a large pot over medium-high heat. Add the ground meat, break into crumbles with a spatula, and cook for 5-7 minutes until browned.
Add the diced onion, bell pepper, and garlic to the pot. Sauté for 3-4 minutes.
- Stir in the black beans, corn, Primal Kitchen Tomato Basil Marinara Sauce, chicken broth, and taco seasoning. Mix well to combine.
- Bring the mixture to a boil, then reduce the heat to medium-low. Cover with a lid and let the soup simmer for 10-15 minutes, stirring occasionally.
Ladle the soup into bowls and top with diced avocado, fresh cilantro or basil, chips, and lime wedges. Enjoy!
