Start by toasting the almonds: Add sliced almonds to a small pan over medium heat. Cook almonds for about 5 minutes, tossing regularly, until they become fragrant and turn golden brown. Once toasted, immediately transfer almonds to a plate to cool for 5 minutes.
- In a large salad bowl, combine the baby spinach, strawberries, red onion, feta cheese, and almonds. Toss gently to mix the ingredients evenly.
Just before serving, drizzle poppy seed dressing over the salad and gently toss to coat.
Serve and enjoy, or portion out for weekly meal prep.
