Ingredients
- 6 cups romaine or green leaf lettuce
1/2 cup cherry or grape tomatoes
- 1 medium green pepper, chopped
1 medium red pepper, chopped
1/2 cup radishes, chopped
1/3 cup red onion, chopped
1 avocado
1 medium cucumber, chopped
2 ounces cheddar or mozzarella cheese cubes
- 1/2 pound chopped or shredded chicken

1/3 cup Primal Kitchen Ranch Dressing
- Salt and pepper, to taste
Directions
Wash your produce. Slice the tomatoes in half. Chop the rest of the veggies into small square pieces similar in size (about ½ inch wide). Slice the avocado in half. Remove the seed, scoop, and cut into cubes.
- In a large bowl, place the lettuce, peppers, radishes, red onion, and chicken. Pour in two-thirds of the dressing and toss to combine.
Add the tomatoes, cucumbers, avocado, cheese cubes, and remaining dressing and gently fold everything together. Season with salt and pepper to taste and enjoy!
