This easy balsamic salad is filled with bold flavors, gorgeous colors, and a variety of nutrients and antioxidants from real fruits and veggies. Easy to make in minutes and beautiful to behold, our rainbow salad recipe is delicious as a side dish or topped with your favorite protein for lunch.
Ingredients
- 8-10 butter lettuce leaves
- 5 cherry tomatoes, halved lengthwise
- 3 oz. shredded carrots
Small yellow bell pepper, sliced
- ⅓ English cucumber, sliced
- ⅓ cup blueberries
- ¼ cup red cabbage, shredded
⅛ cup red onion, sliced
- ¼ avocado, sliced
- Everything bagel seasoning mix

- Tuna salad or sliced chicken (optional)
Directions
Wash and prep the vegetables.
- Line a shallow bowl with the butter lettuce leaves. Add piles of each ingredient in a rainbow circle, starting with the tomatoes (red), then carrots (orange), bell pepper (yellow), cucumber (green), blueberries, purple cabbage (indigo), and red onion (violet).
- Top with sliced avocado in the center.
- Sprinkle with everything bagel seasoning and drizzle with Balsamic Dressing. Enjoy as a refreshing side salad or top with your favorite protein (we recommend tuna salad or sliced chicken). Enjoy!
