Ingredients
½ medium sweet potato

1 tablespoon Primal Kitchen Extra Virgin Olive Oil
1 tablespoons Almond Flour
1 teaspoon Garlic Powder
1 teaspoon Italian Seasoning
A pinch of salt and pepper
1 head of Romaine Lettuce

2 tablespoons Primal Kitchen Plant Based Caesar Dressing
1 tablespoon Plant Based Parmesan, or to taste
Directions
Preheat oven to 425℉
Dice sweet potato and drizzle with olive oil, tossing in a bowl
In a separate bowl, combine all spices, then combine with sweet potatoes until evenly covered in the spice blend
Bake potatoes for 25 minutes at 425℉
Chop romaine lettuce, toss in a bowl and top with Plant Based Caesar Dressing
Add lettuce to plate, grate parmesan onto lettuce, and top with sweet potato croutons
