If you're in a pickle for an easy lunch, you'll love this viral trend! Skip the bread and whip up a sub-style sandwich in 5 minutes by using a large dill pickle in place of a bun. This easy pickle sandwich is totally customizable—make it your own by changing up the cold cuts or using your favorite flavored mayo.

Ingredients
1 large dill pickle

2 tablespoons Primal Kitchen Mayo with Avocado Oil
3 slices uncured deli-style turkey
2 slices uncured genoa or hard salami
2 slices provolone cheese
Shredded lettuce
3 tomato slices
Directions
Cut the pickle in half lengthwise.
Use a spoon to hollow out the inside of each pickle half.
Squeeze mayo into the hollows (this will help hold the sandwich together).
Top one half with a single layer of turkey, then salami, then cheese. Fold the meats and cheeses to fit, as needed.
Add tomato slices in a single layer. Top with shredded lettuce.
Place the top half of the pickle, mayo side down, on the lettuce.
Slice in half and eat! Pro Tip: For easier eating, wrap the pickle sandwich in parchment paper before slicing, then slice in half and peel back the wrapper as you go to enjoy!
