This simple lunch recipe makes the most of stale bread and a few basic ingredients from around the kitchen.
Ingredients
2 Slices of Stale Bread
2 Tomatos

3 tbsp. of Pesto Mayo
Chopped Green Onion

1 tbsp. of Extra Virgin Olive Oil
Flaky Salt
Directions
Spread stale bread with Pesto Mayo.
Place the bread face down and griddle for about 3 minutes on medium-high heat, or until golden.
While the one side is griddling, spread the other side with more Pesto Mayo.
Smash tomatoes in a bowl, then spoon them on top of the griddle toasts.
Drizzle with olive oil, and sprinkle with flaky salt.
Top your toast with green onion and enjoy!
