This simple lunch recipe makes the most of leftover bread and a few basic ingredients from around the kitchen.

Ingredients
2 bread slices

3 Tbsp. Primal Kitchen Pesto Mayo
2 small Roma tomatoes

1 Tbsp. Primal Kitchen Organic Extra Virgin Olive Oil
Flaky salt, to taste
1 green onion, chopped
Directions
Spread bread with Pesto Mayo.
Place the bread slices mayo side down in a skillet or on a griddle plate over medium-high heat.
While the bottoms are griddling, spread the tops of both bread slices with more Pesto Mayo. Heat for 3 minutes or until golden, turning halfway.
Smash tomatoes in a bowl, then spoon half of the tomato mix onto each toast slice.
Drizzle with olive oil and sprinkle with flaky salt.
Top your tomato toast with green onion and enjoy!
