Bite into holiday bliss with this easy Chocolate Peppermint Fudge recipe made with Primal Kitchen collagen powder! Packed with rich, indulgent chocolate flavor and a burst of refreshing mint, these no-bake fudge squares are the perfect holiday gift or party treat.
Ingredients
- 1 cup Medjool dates, pitted
- 1 cup dark chocolate chips
- 1/2 cup full fat canned coconut milk, refrigerated
-
1/2 cup Primal Kitchen Chocolate Peppermint Collagen
- 2 tablespoons crushed peppermint candies, optional
- Flaky sea salt, optional
Directions
Line a 8x8-inch pan with parchment paper.
- Soak dates in hot water for 5 minutes, then add the dates alongside 3 tablespoons of the hot water to a food processor or blender. Blend on high for 20 seconds until smooth.
- To a small saucepan, add chocolate chips and coconut milk. Melt over low heat, stirring with a rubber spatula until smooth, about 4-5 minutes.
- Add collagen and blended date puree to the melted chocolate and stir to combine.
- Using a rubber spatula, transfer this chocolate mixture into the prepared pan and spread evenly.
- Let cool at room temperature for 10 minutes. Sprinkle with crushed peppermint candies and a pinch of sea salt, if desired.
- Freeze for about 1 hour until firm. Remove parchment paper, then use a sharp knife to cut the 8x8-inch pan into 4x4 rows to create 16 squares.
- Store fudge in the freezer until ready to serve.
Recipe Note
- Nutritional information estimated using Cronometer.
- Place the coconut milk in the fridge overnight and use the solid cream, rather than the liquid part that will settle to the bottom.
- For neat cutting, try warming a sharp knife under hot water, wipe it dry, and cut the fudge into pieces.
- You can store fudge squares in the freeze for up to 3 months. We enjoy having it straight from the freezer as it will have a slightly more firm, yet still soft texture. You can also let it thaw for 5 minutes at room temperature before serving.
