Our festive twist on the Starbucks Peppermint Brownie Cake Pop, these easy treats are made with gluten-free flour and our Chocolate Peppermint Collagen for delicious skin, hair, and nail support in every nibble. Whip them up for a special occasion, wrap them in cellophane and tie them with ribbon as a holiday gift, or make a batch with the kids and enjoy some extra-sweet quality time together.
Ingredients
½ cup almond flour
3 Tbsp. butter
¼ cup pure maple syrup (or honey)
1 tsp. vanilla extract
¼ tsp. peppermint extract
½ cup dark chocolate
Holiday sprinkles or sanding sugar (optional)
12 lollipop sticks
Cake pop stand or foam block

Directions
Microwave the butter in a microwave-safe bowl for 30-40 seconds or until melted.
In a medium mixing bowl, combine Chocolate Peppermint Collagen, almond flour, maple syrup, melted butter, and both extracts.
Mix with a spatula until fully combined.
Using a mini ice cream scoop or your hands, divide the dough into 12 equal-sized portions and roll into balls. (If the dough feels too crumbly, add a little avocado oil or extra melted butter.)
Place the dough balls on a parchment-lined cookie sheet or platter.
Push a lollipop stick ¾ of the way through one ball from top to bottom. Repeat the process with all of the pops.
Set in the fridge to chill for at least 30 minutes.
Once the dough balls have firmed up, heat the chocolate in a double boiler or microwave until melted.
Carefully remove each pop from the parchment and dip the cake ball into the melted chocolate. Sprinkle with edible decoration, if desired.
Push the pop stick first into a cake pop stand or foam sheet so it can dry upright. Repeat with the remaining cake pops. Chill for at least 30 minutes before serving, or overnight.
