This easy caramelized onion dip comes together with pure organic avocado oil, a few fridge staples, and a handful of spices. It takes a bit longer to fully caramelize the onions versus sautéing them, but it's totally worth the wait for that satisfyingly rich flavor.
Serve our creamy onion dip with chips at your next tailgate party, or class it up with grain-free crackers and freshly cut vegetables.
Ingredients
2 medium yellow or Vidalia onions, thinly sliced
- 3 tablespoons Primal Kitchen Organic Avocado Oil
- Splash of water or broth
- 3/4 cup 2% cottage cheese
- 1 tablespoon lemon juice
- 2 teaspoons coconut aminos
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 2/3 cup sour cream
- Salt and pepper, to taste
- 1 ½ tablespoons chives
Directions
Heat the avocado oil in a large skillet on your stovetop over medium-low heat. Once hot, add the onions. Stir the sliced onions to coat them with oil, then reduce the heat to low.
Cook for about 30-40 minutes, stirring every 5 minutes or so, until the onions are deep golden brown and well caramelized. If the pan begins to burn or the onions get too toasty, you can add a small splash of water or broth and reduce the heat a little.
Allow the onions to cool, then chop them into small pieces.
Add the cottage cheese to a blender along with the lemon juice, coconut aminos, garlic powder, onion powder, and ½ teaspoon black pepper. Blend until smooth.
Add this mixture to a bowl along with the sour cream and at least 2/3 of the caramelized onions. Stir well to combine. Season with salt and pepper, to taste.
Top with the remaining caramelized onions and chopped chives. For the best flavor, refrigerate this dip for a few hours before serving.
Serve alongside your favorite crackers, chips, and vegetables.
