Breakfast: Egg Muffins and Crispy Bacon
A savory, portable breakfast? Sign us up! These mouthwatering egg bites made with spinach and red bell pepper are the perfect pop-in-your-mouth morning snack.
Ingredients
- 6 eggs
- Cilantro, chopped and to taste
- 1/4 red pepper, chopped into small pieces
- 2 Tbsp. Primal Kitchen Cilantro Lime Dressing
- 6 slices of bacon, halved
Directions
- Add eggs, cilantro, chopped red pepper and Cilantro Lime Dressing to a medium-sized bowl and whisk until combined.
- Pour mixture evenly into 6 silicone baking cups. Place the cups in the bottom of the Ninja Speedi.
- Place the top tray inside the Ninja Speedi and lay bacon slices in a single layer.
- Cook for 8 minutes at 390°F on Rapid Cook mode with the Speedi Meals function. Serve 2 egg muffins and 4 half-slices of bacon with sliced avocado and enjoy!
Lunch: Steak Fajita Salad
Flavorful roasted veggies, perfectly cooked steak, and earthy avocado combine with our Cilantro Lime Dressing for a nutrient-dense, keto-friendly meal. Light enough for lunch, yet filling enough to carry you through the day.
Ingredients
- 1 each red, green and yellow bell peppers, sliced
- 1 white onion, sliced
- 2 petite sirloin steaks
- Salad greens of your choice
- 1 avocado, sliced
- Primal Kitchen Cilantro Lime Dressing
- Grilled corn, optional
Directions
- Slice fajita vegetables into strips and add to the bottom of the Ninja Speedi.
- Place the top tray inside the Ninja Speedi and lay steaks on the tray.
- Cook for 8 minutes at 400°F on Rapid Cook mode with the Speedi Meals function. Rest steak for 2 minutes.
- Arrange salad greens on a plate. Slice steak into strips and place on top of the salad greens.
- Add fajita veggies, sliced avocado and a drizzle of Primal Kitchen Cilantro Lime Dressing. Top with grilled corn, if desired. Enjoy!
Dinner: Chicken Burrito Bowl
There’s no need to order carryout when you can whip up this customizable, restaurant-style chicken bowl. Dinner will be on the table in less time than it’d take you for the car trip to your local fresh-Mex.
Ingredients
- 2 large chicken breasts
- 1 cup rice
- 2 cups water
- 1 can black beans
- Leftover fajita veggies from lunch
- Grilled corn
- Guacamole (or sliced avocado)
- Pico de Gallo
- Grilled corn
- Primal Kitchen Cilantro Lime Dressing
Directions
- Marinate chicken breasts in Primal Kitchen Cilantro Lime Dressing (at least 1 hour).
- Add rice, water, and canned black beans to the bottom of the Ninja Speedi.
- Place the top tray inside the Ninja Speedi and lay marinated chicken breasts on the tray.
- Cook for 15 minutes at 390°F on Rapid Cook mode with the Speedi Meals function. Cut cooked chicken breasts into cubes.
- Add rice mixture to bowl. Cover with chicken. Add fajita veggies, shredded lettuce, pico, guacamole, and grilled corn to the bowl. Drizzle with Primal Kitchen Cilantro Lime Dressing and enjoy.
