1 full rotisserie chicken
8 oz of full-fat cream cheese at room temperature

½ cup of blue cheese crumbles

Preheat the oven to 450°F.
Break down the chicken by pulling the meat off of it. Continue to break it into bite sized shreds with a knife.
In a large bowl, use a spoon to mix the room temperature cream cheese with the chicken.
Add the buffalo sauce, adjusting the amount of sauce to cover the chicken in the bowl and mix thoroughly.
Spread the mixture into oven-safe dishes. Place the dishes into the oven for 20 minutes.
Change the oven setting to “broil” and continue to cook for about 5 minutes.
Remove from the oven and top with blue cheese and green onions.
Serve with grain-free chips or pork rinds and enjoy!
