You've heard of cauliflower rice, but have you tried zucchini rice? This recipe offers a great way to add this delicious and nutritious green veggie to your plate. Rather than using pre-bagged veggie rice, which can contain unnecessary extra ingredients, we opted to make our own from scratch in a food processor (it's easier than you think).

This easy dish is full of eye catching color and a variety of sweet and savory flavors brightened up with the zing of tart cranberries. Made with avocado oil and real organic honey, Primal Kitchen Honey Mustard Vinaigrette adds a tangy, vinegary, slightly sweet finish that brings all of the flavors together into one perfect bite. We served this dish cold, but you can also cook your riced zucchini first and then mix in the toppings for a cozy comfort meal.
