Ingredients
- 1 pound ground chicken breast
- 1 cup grated white sweet potato
- 1/2 cup minced onion
- 1/3 cup chopped parsley
- 2.5 tablespoons Primal Kitchen Olive Oil, divided

- 1 tablespoon coconut aminos

Directions
Grate the sweet potato using the medium side of a box grater.
- In a bowl, combine the ground chicken, sweet potato, onion, parsley, 1 tablespoon of olive oil, egg, coconut aminos, mustard, and spices.
- Add the flour. Mix until combined and let the chicken mixture rest for 5 minutes.
- Heat the remaining 1.5 tablespoons of oil in a large skillet on the stovetop over medium heat.
- Form the ground chicken mixture into 5 large patties and place them in the skillet.
- Cook the patties for about 5 minutes, then carefully flip them over. They should lift easily from the pan, but if they don’t, let them cook for an additional 30 seconds or so and try again.
- Cook on the other side for about 5 more minutes, or until the internal temperature of the chicken burgers reads at least 165°F. Remove the burgers from the heat and allow them to cool slightly.
- Assemble your burgers with Primal Kitchen Mayo, ketchup, crispy bacon, lettuce, tomato, onion, and anything else you’d like. Serve alongside chips or fries and enjoy.
