Corn on the cob that you can eat like ribs? Count us in. Inspired by a viral TikTok trend, this easy grilled corn ribs recipe is a crowd-pleaser at any summer gathering. In wintertime, you can skip the grill and boil the corn on the stove, then season and serve with a drizzle of zesty chipotle lime mayo for an extra punch of flavor.
Ingredients
2 ears of corn

8 Tbsp Primal Kitchen Avocado Oil
2 tsp lemon pepper seasoning
1 tsp garlic powder
1 tsp chili powder
1/2 tsp cayenne
1/2 tsp paprika
1/2 tsp black pepper
1/2 tsp salt
1 Tbsp cilantro, chopped
1/4 cup cotija cheese

Directions
Cut off ends of the ear and cut in quarters from end to end (cut in half longways, then cut each half again).
In a small bowl, combine avocado oil and spices.
Brush the oil mix onto the corn ribs.
Grill at 400°F for 30 minutes.
Top with cilantro and cotija cheese, to taste.
Squeeze Chipotle Lime Mayo on top of each rib. Serve and enjoy!
