Ingredients
- 1 English cucumber
- 8 slices bread (we used gluten-free Carbonaut bread)
4 Tbsp butter, softened
-
- Fresh dill, optional
-
4 Tbsp Primal Kitchen Real Whipped Tangy Dressing & Spread
Alternate Ingredient
Directions
Peel and slice cucumber into ¼-inch rounds.
- Lightly butter one piece of bread. Place 8-9 cucumber slices on the bread, distributing them evenly so the butter is covered.
Spread 1 Tbsp of whipped spread onto another slice of bread. Sprinkle fresh dill on top, if desired. Place the slice spread side down onto the sandwich.
- Using a sharp knife, cut the crusts off of the sandwich. Cut diagonally into 2 triangles or lengthwise into 3 equal-sized rectangles. Serve and enjoy!

If there was ever a simple sandwich that does it all, the classic cucumber sammy is it. Refined and elegant enough for high tea or Sunday brunch, it does double-duty as a kid-friendly lunchbox staple that makes crust-hating kiddos ecstatic. And the best part is how easy this sandwich is to make and assemble. All you need is bread, cucumbers, and a few fridge staples to whip one up in minutes.
Real Whipped Tangy Dressing & Spread is the secret to this tasty twist on the traditional cucumber sandwich. Made with avocado oil and without cane sugar or corn syrup, this gluten-free spread adds creaminess and a distinct tang that you can’t get from mayonnaise or butter. We used a gluten-free sandwich bread that’s ideal if anyone in your family is low-carb or can’t tolerate gluten, but potato bread and sourdough also work well. Tuck these petite sandwich bites in a lunchbox, serve with chips on a lazy Saturday afternoon, or bring them to a potluck brunch!
