Our creamy, crave-worthy take on the viral cucumber salad trend goes from fridge to jar in less than 10 minutes. As fun to eat as it is easy to make, you can give it more Asian flair by adding chili crisp, Primal Kitchen Sesame Ginger Dressing, or coconut aminos for a pop of extra flavor!

Using a mandolin, thinly slice your cucumbers into a mason jar.
Add mayo and red onion.
While still in the skin, slice the avocado flesh vertically and horizontally to form cubes.
Scoop the avocado into your jar.
Season with salt and pepper, to taste.
Cut your lemon in half and remove the seeds. Squeeze lemon half gently into the jar (about 1 tsp of lemon juice). Add 1-2 Tbsp of Sesame Ginger Dressing, if desired.
Place the cap on the mason jar and shake to combine. Serve and enjoy!
