Ingredients
¼ cup cold unsalted butter
5 tablespoons organic coconut brown sugar
1 cup of almond flour
¼ teaspoon baking soda
1 egg
2½ tablespoons whole milk or coconut milk

Directions
Cut the butter into small chunks and place them in a large mixing bowl. Add the coconut sugar to the bowl. Use a mixer to cream the butter and sugar together until fluffy.
Add the almond flour, baking soda, egg, milk, salt, and Chocolate Peppermint Collagen to the bowl. Mix thoroughly until all ingredients are well combined.
Using a spatula, gently fold in the chocolate chunks/chips.
Line a baking sheet with parchment paper and spoon cookie dough onto the parchment (about 10-12 equal-sized balls).
Refrigerate dough balls for at least 30 minutes before baking.
Preheat your oven to 325°F.
Bake the cookies for 10-12 minutes. Set on a wire baking rack and allow them to cool. Enjoy!
