Ingredients
1 lb boneless chicken breast
- Salt, to taste
- 1 tsp black pepper
- 1 tsp paprika powder
- 1 tsp red chili powder
- 1 Tbsp garlic powder
- 1 Tbsp onion powder

1/2 cup softened unsalted butter
- 5-8 cloves roasted garlic
- Salt, to taste
- 1 Tbsp fresh chopped parsley
1 Italian or French bread loaf

- 1 cup mozzarella cheese
- 1/2 red onion, thinly sliced
- 1/2 green bell pepper, sliced
- Chives or parsley, for garnish

Directions
Mix salt, pepper, paprika, chili powder, garlic powder, and onion powder in a bowl. Add oil and mix well. Coat the chicken fully with the mixture.
Add seasoned chicken to a pan prepped with avocado oil over medium heat. Cook the chicken until done (about 10-12 minutes to internal temp of 165°F+), flipping halfway. Once fully cooked, gently shred the chicken using two forks.
- Preheat your oven to 400°F.
- In the meantime, mix softened butter, roasted garlic, salt, and parsley to make the garlic butter.
- Assemble: Slice the loaf, spread garlic butter, and layer chicken, buffalo sauce, mozzarella cheese, red onion, and bell pepper on top.
- Bake at 400°F for 10-12 minutes until the cheese melts and the bread is toasted. If desired, broil for an additional 1-2 minutes until the cheese is bubbling and brown.
- Garnish with chives or parsley, slice, and serve.
