Made with turmeric, curry powder, raisins, and almonds, this easy curry cauliflower is a less starchy take on a classic Middle Eastern dish traditionally made with saffron rice. Flavorful and savory, it pairs well with beef kabobs, spiced chicken breast, or lamb burgers.
Ingredients
1 bag cauliflower florets (we used Taylor Farms)

2 Tablespoons turmeric
3 Tablespoons curry powder
- Himalayan salt (to taste)
- 1 sprig of mint
- 1/2 cup golden raisins
- 1/2 cup sliced almonds
Directions
Preheat the oven to 400°F.
Pour the cauliflower florets into a large ziploc bag.
Add the turmeric, curry powder, Primal Kitchen Mayo, and a pinch of salt into a mixing bowl. Mix the ingredients together into a uniform blend.
Pour the spice blend into the plastic bag with the cauliflower. Shake the bag until the cauliflower is fully coated.
Spread the florets out on a baking pan, and roast until golden.
Top with chopped mint, golden raisins, and sliced almonds. Warm in the oven for a minute or two, if desired. Enjoy!
