This easy 5-ingredient recipe is the perfect alternative to mashed potatoes at Thanksgiving, for a family dinner, or anytime. Make them in any pressure cooker, Instant Pot, or even in a steamer basket over a pot of water, and then follow the rest of the instructions.
Ingredients
1 head of cauliflower
1 cup water

1 tablespoon Primal Kitchen Pure Avocado Oil

1/3 cup Primal Kitchen Ranch Dressing
1 tablespoon ghee or butter
Salt, to taste
Parsley, optional
Directions
Break the cauliflower into florets.
Insert the steamer basket into the pressure cooker and add 1 cup of water.
Add the cauliflower to the pot and cook for 5 mins on manual high pressure.
Once cooked, transfer the cauliflower to a food processor or blender.
Add avocado oil, ranch dressing, and salt (to taste, approximately 1/2 teaspoon).
Pulse the ingredients until you achieve the consistency of mashed potatoes.
Garnish with parsley, if desired, and serve. Enjoy!
